Broiled Chicken Cutlets with Pesto: Season a 5-ounce chicken breast cutlet (156) with salt-free spice mix of your choice and spread 1 tablespoon prepared pesto (80) on top. Broil for 5 minutes or until no longer pink in the thickest part. Slice a plum tomato (11) and arrange on top. Scatter 2 tablespoons shredded part-skim mozzarella cheese (36) and 2 teaspoons grated Parmesan cheese (14) over the tomato.
